Any other mamas out there starving?? This summer is moving in a bit of a whirlwind of activity and mama is hungry!! A few times recently in the evening I ask myself besides the dinner I just had, did I eat today? I know the kids ate today, around the clock it seems. They are always hungry and I’m almost always a short order cook, despite my best effort’s to make them independent at getting their own food. My daughter believes at any given time I’m carrying a mini fridge of her desired next snack in my purse. My son thinks our pantry is magical and restocks itself after the last applesauce pouch is eaten. “How could we not have more, I finished the box yesterday?”
I swear my kids have a sixth sense of the timing of me trying to eat. They need something, they lost something that needs to be found immediately or they need to be somewhere. Props too on the stellar hearing, they can hear the refrigerator door open from across the house. They can hear a wrapper being opened from behind a closed door. My food looks so good when I do sit down to eat it, they want it. It starts with a taste, continues with more tastes and then before I know it-I lost my plate! How can a mom nourish herself without hiding in the master closet with a quickly put together sandwich? Am I on a liquid diet that I’m unaware of? There has to be a better way!!
I asked Nadiah Sanchez for help. Let me give you some details about her. Nadiah is a stay at home mom to her three kids-Alexah almost 7 and twins Cole and Kylie almost 5. She has been a stay at home mom since her oldest was born and has never doubted it was the right choice for her and her family.
I asked her to tell me what she loves about staying at home and she replied “Getting to watch my kids grow before my eyes and having seen all their firsts has been amazing. I get to be here for them daily. I’m living in these wonderful moments because they won’t want to be around me forever.”
As her children grew, she began to think about taking on part time work that she could do while they were in school. The kids were going to school half days but she also needed flexibility. All three kids would be home in the afternoons and they all had after school activities. Her husband also travels for business and she wanted to know that she could always be present for the kids whatever his travel schedule happened to be on a given week.
“I have ALWAYS had a passion for health and fitness, it was in the last few years that I went for it. I am a certified Personal Trainer and Independent Beach Body Coach. For me this opportunity was a no-brainer because I want to live a happy, healthy lifestyle and help others do the same. ” she said.
I knew that Nadiah would have some great ideas because- I have been fascinated with (and kinda stalking) the healthy meals she puts together. She agreed to share a few of her lunch ideas with me, lunch seems to be my biggest stumbling point each day.
What kind of friend would I be if I didn’t share them with you? Here’s a sample week of lunches. With a little prep ahead of time on say a Sunday afternoon you can be eating healthy all week, even if you’re on the go! In no particular order here are 5 lunch ideas:
Mason Jar Salads-
“You can really add anything you want but one of these is an egg salad mason jar. Add salad dressing on the bottom then carrots and cherry tomatoes cut up, corn, cut up eggs and spinach or lettuce of your liking.
The other example is a chicken mason jar salad. Salad dressing (I did a raspberry vinaigrette), chickpeas, cucumbers and tomatoes cut up and then topped with cut up cooked chicken and and the type of spinach or lettuce you like. If you prep these on a Sunday they will last all week. Since the dressing is at the bottom, nothing gets wilted.”
Zoodles with Turkey-
“Zucchini noddles cooked (use a spiralizer,julienne or use a mandoline to cut zucchini, boil for 1-2 minutes) and drained. Ground turkey browned on the stove. Served with a side of steamed veggies-in this example red and yellow peppers with mushrooms.”
Veggie and Egg Muffin-
“Preheat oven to 350. Chop veggies and cook until tender. I used 3 cups of mixed vegetables-peppers mushrooms and spinach. Spray muffin tin. Divide veggies, 1/2 cup chopped onions, cheese (which is optional) over 12 muffin pans. In a large bowl mix 12 eggs, 1/4 cup of skim milk, pinch of salt and pepper. Pour egg mixture evenly over each cup and bake for 20-25 minutes. Remove cups and serve warm or let cool and refrigerate. I put them over whole wheat English muffins and then add tomatoes.”
Asian chicken lettuce wraps
“Get some strong leaves of Romain lettuce or Butter Lettuce and some rotisserie chicken shredded. Unsalted cashews, shredded cabbage and green onion. Put down one leaf of lettuce, put your portion of chicken and shredded cabbage (the amount depends on the size of the leaf). For taste add cut up green onions and add 8 raw unsalted cashews crushed up on top. Add 1 tablespoon of peanut lime dressing or one of your favorite dressing’s.”
“In a medium sauce pan brown 1 pound of ground turkey and season with salt. Remove to a plate. Add olive oil to the pan and sauté 3 cloves of garlic and 1/2 of an onion for about two minutes. Return ground turkey to pan and add 1 28 oz can of crushed tomatoes, 2 tbsp of chopped fresh basil and a pinch of salt and pepper. Simmer on low for 30 to 40 minutes, covered. Meanwhile slice 3 medium zucchinis into an 8th inch thick slices and add salt. Preheat burner and grill 2-3 minutes per side of zucchini or until zucchini a slightly browned. Place on paper towels to soak up any excess moisture. Preheat oven to 375°. In a medium bowl mix 1 1/2 cups of ricotta cheese, 1/4 Parmesan Reggiano cheese and an egg. Stir well. In a 9 x 12 casserole dish spread layer of zucchini then layer of sauce to cover the layer of zucchini. Next up a layer of the ricotta cheese mixture then top with shredded mozzarella cheese (you’ll use 16 ozs total) and repeat the process until all the ingredients are used up! Lastly you top with remaining zucchini and sauce and cover with foil. Bake for 30 minutes then uncover and bake another 30 minutes. Then place remaining mozzarella cheese on top and put it in for final 10 minutes. Let cool.”
Does this food not look amazing? These are actual meals she made that she sent me pictures of. The key is a little ahead of time prep. She will make 6 mason jars at a time for example-3 for her and 3 for her husband. This save scrambling for any old thing in the fridge on an especially busy day, her good choices are also easy ones.
I want to share a bit more about Nadiah’s job in case there are more healthy choices you might be looking to make.
